I ran out of mayo...and was planning to make a macaroni salad to bring to a potluck. Pondered if I had what it would take to make some. I've always wanted to, but thought it might be too time consuming. What I found out was the polar opposite! Tastes great, is cheap and so easy! Jump in and try it! If you don't have a food processor, I htink a blender would be just fine.
I will likely never pay for mayo again! I won't allow myself to pay more than 2.99 for a jar (1.99 if I find a really great sale) I think it likely cost less than .50 cents for about 2.5 cups. It all adds up! $2 to $4 a month savings depending on how much mayo we use. Summertime means cold salads and we easily go though 2 jars a month.

Life got crazy and the blog was forgotten....but I thought I'd try again! So...updating my kids ages: 18, 15, and 5! How time passes... Grandma is still with us and unfortunately showing signs of more significant Dementia. Hubby and I just celebrated our 24th Anniversary with a single happy hour beer and cider respectively....and living on the razors edge in our bank account. Life has been like that lately. Every time we try to get our savings built up, we get our feet knocked out from under us. If it's not glasses for the kid that accidently broke them, then it's a late night ER trip for stitches for the other. So, we didn't want to eat at home with the crew and a cider and a game of backgammon did make quite a lovely date with my beloved...we're saving for our family vacation to Rockaway, so it's got an element of something to look foreward to.
So, I am sure I am not the only person out there trying to figure out how to make a buck stretch. Products keep going up in price and paychecks are not increasing. I had a huge wake up call today when I happened to look at local rents in the Portland area and was shell shocked! I'm so grateful we bought this home when we did, but after 2008, life has never been as easy as it was (we didn't think it was all that easy back then!) and we've had to make more and more changes. (Helloooo homemade laundry soap! lol....) Well, a heck of a lot more than just the soap....but each little bit helps right? So, as I am continuing in my quest to pinch a penny I thought I could write it down here....along with whatever else suits my fancy. If all I do is write for myself, I'm good with that. It may well be a good pressure release to my day! So....onward!

Welcome to my first post!
Hello all! I decided to jump in to the land of blogville...to share tips and links on ways to stretch a buck when payday is a week away! I've been married to my guy for just over 20 years and we've seen times of plenty and times we didn't know if we were going to make the mortgage payment. I'm a card carrying member of the 'Sandwich Generation'. I've got three girls ages 14,12, and 2 and my mom as well! That's 6 in all...plenty of mouths to feed!
